Vauthy is exec chef, Red The Steakhouse, and a partner of Moxie and Red. After graduating in 1998 with distinction from L’Academie de Cuisine (Gaithersburg, MD), Vauthy took a job at age 28 at Indigo at Great Falls (VA), named one of the area’s best restaurants in 1999. He spent about 18 months at Indigo, then left for Cleveland and Moxie where, as a line cook, he learned first hand from exec chef, Jonathan Bennett, how to improve and hone his skills. Threeyears later, Bennett named him sous chef; and a year later, he was named exec chef of Red, named one of the top five steakhouses in the country by Esquire magazine and one of the 10 best in Playboy. “We order and work with the best,” Vauthy will tell you. “If we don’t have what the world says is the best, we search for it until we track it down. We don’t deal with second-rate ingredients here.”
