Devin Rench has been a fixture on the Cleveland restaurant scene since 1993 when, having moved here from California where he worked at a couple of starred restaurants, he assumed management positions at Johnny’s Downtown, Morton’s of Chicago, The Shoreby Club, Classics, and—most recently—Stonewater Golf Club and Grill where, as clubhouse manager he managed, in a little over a year, to achieve a 25-percent growth in food and beverage revenue. Rench’s responsibilities include supervision of dining room and kitchen employees; controlling food, beverage, and labor costs; and greeting guests to make sure they’re comfortable and, if they are not, finding out why they are not. Says Brad Friedlander, “There is nothing like the comfort level a general manager can provide throughout a dining room that convinces diners our restaurants must be top of mind whenever they decide where they want to dine.”
